Evaporators are used to remove solvent from the food products in form of vapor. For most evaporation systems, the solvent is water and heat are provided by steam condensation.Main factors in consideration during evaporator design are 1. Heat Transfer.2. Liquid-vapor separation. 3. Energy consumption efficiency.The heat transfer units are called calandria(single tube heat exchanger). The liquid-vapor separation units are called flash chambers or separation tanks. Flash chamber and calandria are combined together form the body of the evaporator.
